Growing up, our family cat, Callie, was super chill. I think that's just because she was raised alongside my brother, who my grandma nicknamed the "demolition derby" while he was a little boy. Callie learned not to be phased by much! To be honest I don't really remember how active / destructive she was as a kitten.
HA! even if you get a laid back kitten, just remember: It's most likely saving all it's energy for the teenage time..

I wouldn't have survived kittens if there had only been one. Thank goodness my girls had each other to burn off all that endless energy!! You should have your fiancé read through the Behavior threads from all the people who are desperate for SLEEP!!!!!!

Oh goodness, don't scare me off! I know puppies will keep you up all night, but kittens? I guess it's good I have some time to read up on training, etc!

Not trying to scare you off, just saying two kittens are better than one. Well, maybe only if sleep is important to you.

I really don't think I could have handled a single kitten.
