Wet Food Question

I have questions about feeding my cats wet food, they are Very picky.

Having read a lot of post I got a list of wet foods that are good for cats, but given:

"Wellness core, Evo, Innova, Nature's Variety Instincts, Weruva, and Merrick's Before Grain"

Which brands are flaky, fresher looking like Fancy Feast Appetizer? I found that Weruva has that similar consistency.

My older cat just makes a mess out of the food that is pressed together in the shape of the can.
