so i'm up to the step where i can touch her teeth (big canines and tiny front teeth inbetween) and rub around for a few seconds- i figured the next logical step would be to get the toothpaste and let her taste it. Now she gets so excited about licking toothpaste off my finger that i can hardly get her to sit still, let alone get my finger in her mouth!!

This is your chance to graduate to the toothbrush. she has to open her lips a little to lick. take advantage of that to stick it in there (gently!). soon she'll get used to it, and you can start moving toward the back teeth. I've been brushing my cats' teeth for some time, and they're always chewing and licking as I do it. I just think it's a natural relfex action to something in their mouth.
