My vet says no food or water after midnight (so that'd be 10:00pm for me -I'm not about to get up at midnight and take it away ).
They do all of the surgeries by 10am, so the animal would have water within 12 hours.
Whenever I've had to go to the doctor for something that requires restriction it is also withhold food and water after midnight.
