The selection of foods that are available around here I'm not impressed with, so I'm starting to look at making my own cat food to feed to my kitties, are there any good websites for information on balancing the diets, what to use in the diets, and things like that?

A raw diet is going to be a lot easier than a cooked diet because cooking destroys so many nutrients a cat needs, and you're going to have to add a lot of supplements in just the correct proportions. Just look at the ingredients label on a can of cat food.
