Do you know why she might be doing this?

I am a little worried about Princess and her unsual behaviour just recently.
For about a week she's being going to poop by the stairs rather than use her litter tray. I noticed once she went into her tray and then got out then went and had a poop. She is still happy to have a wee in there though.
Also Kit bit off one of her back claws today which I found odd but she's often trying to bite them and they are not long or anything.
Any idea's why she could be doing this at all?

you need 2 litter boxes for 1 cat and 3 for 2 cats.
she wants to poop in one place and pee in another.

you may want to take her to the vet to make sure shes ok. those are usually signs that the cat is sick.

how old is she btw?

You have two cats and one litter box? The most likely answer is not enough litter boxes. The rule of thumb is number of cats plus one. Another likely answer is the litter isn't kept clean enough. Third likely answer is she likes to poop in one and pee in another. Best answer to all three: more litter boxes and keep them clean.

No I just got the 1 cat. She's about 10 months old now and she had a poorly tummy for a couple of months been to the vets so many times, it looks like that though she's lactose intolerant now.
The cat little is always clean, I change the litter daily and its one of the more expensive ones to so I don't think its to do with it not being clean.

she probably wants another litter box to poo in. It happens. i have a cat that pees in her litter box, leaves it, and comes back to it to poo in, i guess she has the memory of a goldfish cause she does it all the time!

Chelle, the cost of the litter isn't of any importance to a cat. Cats have different preferences for litter. In addition to adding another litter box, you also might want to try a different litter. Switch to a different texture, or non-clumping if you're using clumping, non-scented if you're using scented, etc. Just try something different for several days and see if it makes a difference.

I cetainly will give it a try and see what happens, she's been ok for a couple of days but I will try the 2nd litter box and also a defferent litter. I will let you know on her progress.
