Vegan cookie recipes requested

I'm going to a picnic on Sunday with my roller derby team and want to bring some cookies. However, a significant number of the girls are vegetarian and a few are vegan so I need to bake cookies that everyone can eat. It needs to be a fairly quick recipe as I won't have much time to make them. It's going to be for about 40 people.

All suggestions much appreciated!!

I cooked vegan chocolate chip cookies like 10 minutes ago. I use the recipe from this website Happy Vegan Chocolate Chip Cookies. Enjoy!

Here are two that actually sound yummy!

Chocolate Spice Cookies

These vegan chocolate spice cookies are similar to a molasses or a gingerbread cookie, but with just a hint of cocoa for a chocolate flavor. These are a great vegan cookie for Christmas, but I like molasses cookies year round!



Ingredients:
  • 1 1/2 cups flour + 1 tbsp
  • 1 1/4 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1 tbsp cocoa powder
  • 1/2 cup vegan magarine
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 tsp baking soda dissolved in 1 1/2 tsp boiling water
  • 1/4 cup sugar
Preparation:

Whisk together the flour, ginger, cinnamon, cloves, nutmeg and cocoa in a small bowl and set aside.
Beat together the margarine and brown sugar. Add the molasses and mix well. Add half of the flour mixture and the baking soda mixture and combine well. Add the rest of the flour mixture.
Chill, covered for at least one hour. Pre-heat the oven to 325 degrees.
Spoon dough into 1 1/2 inch balls, then roll each ball in the sugar. Bake 13-15 minutes, until surfaces start to crack slightly.

Peanut Butter Chocolate Chip Cookies

Ingredients:

  • 1 cup vegan margarine
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup soft (silken) tofu
  • 1/2 tsp vanilla
  • 1 1/2 cups flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup peanut butter
  • 1 cup chocolate chips
Preparation:

Pre-heat the oven to 400 degrees. In a large bowl, cream together the margarine, sugar and brown sugar. Add the tofu and vanilla and whisk until smooth and creamy.

In a separate bowl, combine the flour, baking soda and salt. Add to the margarine mixture and combine well.

Add the peanut butter and mix well, then fold in the chocolate chips.
Roll the dough into 1 inch balls and place on a baking sheet. Bake for 5 to 8 minutes, until cookies are golden brown.
