Yes. To sit and contemplate why St. Patrick and his catholic church felt the need to drive the pagans (snakes) out of Ireland and replace their 'holiday' Ostara with St. Patrick's day and Easter.

I pre-celebrated with a big dish of corned beef hash and eggs at my favorite restaurant yesterday. Of course I probably would have ordered that regardless of month and day. It was sooo good.

My sister makes the most awesome corned beef hash in the world - and a corned beef pie that is amazing!

St. Patrick's Day is her God-daughter's birthday (one year old) so we'll be making a gift delivery.

Irish stew sounds good! Or...

Corned beef and cabbage:


12 new potatoes quartered
4 carrots sliced
4 lb corned beef brisket
2 onions sliced
3 bay leaves
8 black peppercorns
1 head cabbage, wedged

Place potatoes and carrots in bottom of crock pot
Add brisket, onions bay leaves and peppercorns
Add enough water to cover. Cook on low 8-10 hrs or high 4-5 hours
Add cabbage halfway though cooking
