A whole, raw turkey is fine. Even if it's a "pre-basted" turkey, chances are that the basting material has just been placed under the skin, so removing the skin and wiping off the baste should make the whole thing safely feedable.
Turkey bones are too large for most cats to eat intact, though they can be ground and fed that way, if you have a grinder with enough power to handle turkey bones. Even if you just remove the meat from the bones and toss the carcass, you're still getting a lot of very good, raw meat. Better yet, remove the meat for your cats, then boil up the carcass to make a nice turkey stock for soup for yourself.
