Hi- new cat owners agression issues

Hi- we recently took home an 18 mo female cat from the local shelter (Lilo), a home she's now steadily made her own.
Recently though, she's started to show increased signs of agression to my girlfriend. This started off as what we assumed were playful bites (generally when my GF would hop into bed at night)- Lilo more often than not, was already laying there- but became more common to occuring throughout the day, and was always directed at my GF.
About the same time she also took to lying on my lap exclusively when we were both at home (a source of light-hearted banter between us, as the cat was her idea & I was most certainly a cat person at that point).
After this continued for a while, and after after consulting the net/friends for advice, my GF took to taking a water bottle with her to give her a quick squirt whenver the biting started to occur or telling her firmly no whilst gently grabbing her by the scruff of the neck.
More recently however, Lilo has taken to launching at my GF's leg and biting firmly without release. This now occurs quite frequently (our general response is to place her in a time-out), but is obviously getting quite disturbing & painful. The fact this is never directed at me, has lead us to suspect this is some sort of dominance display, but we'd really appreciate any tips on how to control the beaviour as it's starting to impact on our experiences with an otherwise pretty-cool cat.

I'm no expert, but rather than having her squirt water, which isnt exactly going to create warm feelings towards your GF, why dont you try having her be the source of all things good (food, treats, petting, play) for a while?
