New adult oriental cats...

Hello all!
Two weeks ago I adopted two 2 and a half year old female oriental cats. They had been used for breeding but were of no use to the breeder anymore. They only got spayed three weeks ago and I have had them for two weeks and they just haven't settled yet. One of them has started to hiss at me even!
I am making them eat their dinner right next to me or they don't get any to hopefully associate me with nice things, but no improvement has happend yet.
One is ok, the other is bonkers and very defensive. How long until the lack of oestrogen kicks in and they might give me a chance? How long does it take for adult orientals to settle in? Or do they just hate me??

I would give them a solid month to settle in and be comfortable... but I've heard Orientals are a little high strung, so maybe it will take longer. Whenever I have moved in geographical location, it has taken some of my kitties a few weeks to settle in... some are no different. Maybe it is a big adjustment for them since they are not used to your smells and environment. I would just let them be... bribe them with chicken baby food or pieces of turkey... and eventually they will see how wonderful their new life will be!
