Every winter I make 3-4 pots of soup, portion them out, and freeze them for quick meals. I love soup!!! I'd eat it every meal, every day if I could.

But, I am trying to clean up my diet and lose a few pounds (so far so good).

Anyone have suggestions on cookbooks and/or links to healthy (low-cal/low-fat/low-sodium... whatever) soup recipes?

Also, let me know if you've tried them!

One soup suggestion that is really good is that whenever you make a whole pot of soup fresh, let it sit in the fridge for a while before you freeze it. Eventually the fat all pools in the top and you can just scoop it out. This should lower the oil/fat content of the soup and make it just a tad healthier!

Tomato soup is healthy, right? Gosh I hope so.

I just prepare fresh vegetables and slow cook them in a family size can of tomato soup all day. I love it. You can add ground meat or stew beef if you're feeling daring, but that defeats the purpose of being healthy. :wink:

I love soups! ... it's a staple food in our household. :) We cook meat soups, vegetable with either regular cabbage, sour cabbage or red beets, split pea with cold-smoked ribs, mushroom, cold soups with beets and cucumbers/eggs <- amazing taste! :p :p

... plus, all are all-natural home-cooked and healthy. Not for the ankits dieter though, too much cabbage in all of them, except the cold soup with veggies and eggs, that one is OK :p
