They would get the nutrients they need if you're looking at a whole prey model. Depending on how old and how finicky your cat is, he/she may not see this as food.
It may be easier to transition them with a frozen grind that's closer to a canned food. There's a few brands that have "fit for human consumption" meats, bones, and organs in the correct proportions, and they're usually available at specialty pet stores (depending on your area). Personally, I don't feel comfortable feeding just that without adding my own supplements to it, although they do say it's a complete diet.
